Celebrating the warmer weather with a barbecue? It’s easy to forget that germs and bacteria can multiply at an alarming rate in warm conditions and cases of food poisoning double in the summer months. Bacteria can spread from one food product to another and contaminate chopping boards, knives and worktops. Wash utensils and surfaces before and after use with hot, soapy water. Better still, sanitise them with diluted bleach – 1 teaspoon of bleach to 1 litre of hot water.
Barbecues can be bad news if not carried out properly and cross-contamination is one of the most common causes of food poisoning. Never use the same pair of tongs to handle raw and cooked meats. Raw foods may contain harmful bacteria, but these can be destroyed if cooked thoroughly.
Bacteria can multiply rapidly at temperatures between 4ºc and 60ºc so keep any food refrigerated before cooking or serving.
Less is more
It’s nice to have a fridge full of tasty treats, but don’t be tempted to pack your fridge until it’s bursting at the seams! Air must be able to circulate to ensure that the food is properly cooled or it may not be safe to eat.
Keep it clean
Make sure that your hands are a germ-free zone by washing them for at least twenty seconds with warm, soapy water. It’s important to do this before and after handling raw meat, poultry, fish, shellfish or eggs.
Blast away bacteria
You probably wouldn’t think so, but the sponge that you use to do the washing up can carry harmful bacteria, which may transfer on to seemingly clean crockery and cutlery. Blast away any stubborn germs on tea towels and sponges with a weekly wash in the washing machine on a hot setting.
